I am a major fan of the bar cookie. It’s not that I have anything against round cookies, but it is a little more time consuming because you have to roll so many balls of dough and bake multiple batches. Sometimes I’m baking with the kids and we’re in no hurry and have plenty of time to sit and portion out tablespoons of cookie dough on the pans. But sometimes we just don’t have a ton of time and I want to whip something up quickly. That’s when I turn to desserts like these Oreo bars.

To make these Oreo bars you will need flour, baking soda, salt, butter, brown sugar, granulated sugar, an egg, vanilla extract, Oreo cookies, white chocolate chips and semisweet chocolate chips.

How Do You Make Oreo Bars?

To make this Oreo bars recipe start by preheating your oven and placing parchment paper in a greased pan. In a bowl, combine flour baking soda and salt. Stir them together. Next use a mixer to cream together butter, brown sugar and granulated sugar. Mix in an egg and vanilla extract to the butter mixture. With your mixer on low, add the flour mixture to the wet ingredients. Fold in half of your chopped Oreos and white and semisweet chocolate chips into the batter. Place the batter in your prepared pan and sprinkle the remaining Oreo cookies and chocolate chips over the top. Bake the bars and let them cool. Serve and enjoy your Oreo bars!

Tips For The Perfect Oreo Bars

  • You can use chocolate chips or chunks , whatever you prefer. I like to use a combo of chocolate chips and chunks because I like the different textures and I think it’s more visually appealing.
  • When you chop your Oreos, try to cut them into similar sized, bite-sized chunks .
  • Look for white chocolate where the main ingredient is cocoa butter; so many brands of white chocolate these days are full of palm oil and it’s just not the same.
  • When you stir in the cookies, try to leave the cookie pieces intact. You want Oreo cookie pieces, not cookie powder!

I use a stand mixer for this recipe; however, you can use any electric mixer.

You can freeze Oreo bars. I recommend placing your bars in an airtight container or freezer bag. They will last in your freezer up to 3 months.

Flavor Variations

While these cookie bars are delicious; you can change the recipe to add your favorite flavors.

  • Cookies: You can use different seasonal flavors of Oreos. Double Stuf Oreos also work. If you have other favorite cookies, you can chop them and put them in this batter.
  • Candies: For a colorful cookie bar you can substitute some chocolate chips for M&Ms. You can also pick your favorite small chocolate candies and add them to this bar.
  • Marshmallows: Mini marshmallows would be great in these bars.
  • Nuts: Feel free to add chopped pecans, walnuts or almonds to these bars.

What did my kids think of these Oreo bars? They loved them of course! The adults loved them too. I served these bars cut into small squares at the end of a big meal and it was just the right bite to satiate everyone’s appetite for something sweet. They would also make a decadent afternoon snack!
